  • Heat ghee in a pan and add semolina.
  • Roast the semolina until it turns golden brown and fragrant.
  • Crush the cardamom pods and add them to the roasted semolina (this will add a nice flavour).
  • Once roasted, add condensed milk and a little hot water to the semolina.
  • Cook for a few minutes until well combined.
  • Meanwhile, blend the watermelon and strain the juice to remove any solids. It is important to extract the juice properly; otherwise, the taste of the watermelon seeds might alter the sweetness of the desert.
  • Add the watermelon juice, sugar, and food color to the pan with the semolina.
  • Cook for a little longer until the semolina absorbs the liquid and the mixture thickens. stir continuously.
  • When the semolina absorbs the liquid and the mixture starts to come together, transfer it to a clean dish greased with ghee.
  • Smooth the surface with a little ghee.
  • Allow the dessert to cool slightly.
  • Once it has cooled down, cut it into desired shapes like round, rectangular, or square pieces.
  • The Sweet Watermelon Semolina Dessert is now ready to be served.
  • You can garnish it with cashews or raisins for presentation.
