Heat ghee in a pan and add semolina.
Roast the semolina until it turns golden brown and fragrant.
Crush the cardamom pods and add them to the roasted semolina (this will add a nice flavour).
Once roasted, add condensed milk and a little hot water to the semolina.
Cook for a few minutes until well combined.
Meanwhile, blend the watermelon and strain the juice to remove any solids. It is important to extract the juice properly; otherwise, the taste of the watermelon seeds might alter the sweetness of the desert.
Add the watermelon juice, sugar, and food color to the pan with the semolina.
Cook for a little longer until the semolina absorbs the liquid and the mixture thickens. stir continuously.
When the semolina absorbs the liquid and the mixture starts to come together, transfer it to a clean dish greased with ghee.
Smooth the surface with a little ghee.
Allow the dessert to cool slightly.
Once it has cooled down, cut it into desired shapes like round, rectangular, or square pieces.
The Sweet Watermelon Semolina Dessert is now ready to be served.
You can garnish it with cashews or raisins for presentation.
