It’s a great way to use up those dandelions in the yard, or you can get dandelion greens in your local grocery stores or Asian markets.

However, my connection with these dandelion greens is a whole other story. I have been growing some radishes, cucumbers, tomatoes, and other vegetables in my yard for a few years. The garden looks beautiful with all the flowers and trees that surround it. A few days ago, I saw these dandelion greens in the neighborhood and got interested to plant them in my garden too. My neighbor also gave me some seeds of dandelion plants for my garden. I planted them and now they grew up and also look so beautiful.

Afterward, I came up with this idea and tried to make a recipe with it. This recipe is a great way to enjoy the bounty of your garden. It’s also a wonderful way to introduce new vegetables into your diet.

One of the most common complaints about dandelion greens is how bitter they are. They are really a bit bitter, but don’t let that stop you from trying some! Bitterness is a key component of taste in cooking, and eating bitter foods improves digestion by stimulating the production of more stomach acid, which in turn helps in the faster breakdown of foods.

These sautéed dandelion greens are too tasty with steamed rice. So grab a plate of rice and have a green chili or Kacha morich and mix it with dandelion greens. You are going to love it for sure!

Pro Tips: Whenever you’re cooking dandelion greens, you can remove some of their natural bitterness in one of two ways. The first idea is to soak them in cold, well-salted water for 10 minutes. The other way is to blanch dandelion greens for two minutes in salted boiling water, then cool them in cold water.

Ingredients

  • 1 pcs large bunch of dandelion greens or any greens, chopped
  • 3-4 pcs garlic cloves, chopped
  • ½ pcs large onion, sliced
  • 1 pcs dried red chili
  • 2 pcs green chili
  • ½ tsp salt to taste
  • ½ tsp turmeric powder
  • 4 cups water

Instructions

  • Wash the greens in a strainer bowl
  • In a pot, boil water on high heat for about 8 minutes. Add the greens and boil for about 5 minutes. Put the greens back in the strainer.
  • In a large frying pan, saute onion, garlic, and green and red chili on medium-high heat for about 5 minutes. Wait for the onions to soften up.
  • Add the greens to the frying pan and sprinkle turmeric powder and salt to taste.
  • Saute the mix for 6-8 minutes on high heat.
  • Close the lid and cook for another 5 minutes on high heat for the spices to get infused with the greens.
  • Sauteed Dandelion greens are served!
