Kala Bhuna

Kala bhuna is a dish of tender meat, typically mutton or beef curry that originated in Chittagong, Bangladesh. The name “kala” or “Kalo” means black in Bengali, “Bhuna” in Chittagonian dialect means deep-frying, referring to the dark hue achieved through slow cooking and the use of specific spices. It was originally served during the early 17th century, though the exact origins of the dish remain uncertain.

The tender pieces of beef absorb the rich marinade of yogurt, garlic, ginger, and a special blend of spices, resulting in meat that is juicy and flavorful. Instructions

  • First, take 1 kg of beef in a pot and add salt to taste, 2 tablespoons of chili powder, half tablespoon of turmeric powder, 2 tablespoons of spice mix powder, 1 tablespoon of cumin powder, half teaspoon of nutmeg and mace powder.
  • Then add whole spices like 4-5 cardamoms, 1 black cardamom, 6-7 cloves, 3-4 pieces of cinnamon, 3-4 bay leaves, and 6-7 kabab chini.
  • Add 1 cup of pre-chopped onions, 4 tablespoons of onion paste, 2 tablespoons of garlic paste, 2 tablespoons of ginger paste, along with 1/2 cup of fried onions.
  • Then add 7-8 dried chili peppers, half cup of oil used for frying onions, and half cup of mustard oil. Mix all ingredients well.
  • Now put it on medium heat on the stove, stirring occasionally to prevent burning. Add some hot water to the meat and let it cook down. After some time, you'll notice a darkish color developing. For tempering, fry some mustard oil, dried chili peppers, and chopped garlic in a pan, then pour this over the meat. Finally, serve the meat in a bowl, garnishing with some fried onions on top.
