Today, I tried a recipe called “Aloor Dal,” which is a regional dish from Rangpur. I learned this recipe from my grandmother.

  • First, boil the Potatoes and mash them well.
  • Now, beat 4 Eggs in a bowl, add 5 finely chopped Onions, 5 finely chopped Green Chilies, required Salt, and 1 tsp Turmeric Powder to the beaten Eggs, and mix well.
  • Once all the Eggs are fried, cut one fried Egg into 2-3 pieces.
  • Heat a pan with Oil, add 5 finely chopped Onions and fry until they become soft. Then add 5 chopped Green Chilies, 2 tsp Chili Powder, 1 tsp Turmeric Powder, 1/2 tsp Coriander Powder, 1/2 tsp Cumin Powder, Coriander Leaves (optional), and a little water. Mix the spices well.
  • Once the spices are well cooked, add the mashed Potatoes and mix well.
  • After mashing the Potatoes, add water as required and mix well.
  • When it starts boiling, add the fried Eggs and mix.
  • Cook until the water evaporates and thickens. Finally, sprinkle 1/2 tsp Cumin Powder on top and remove from heat.
  • The delicious "Dim Alur Dal" from Rangpur is now ready.
