Instructions

  • Heat oil in frying pan on medium high. Add onions, garlic and green chili.
  • Add turmeric powder once onions are golden brown and saute for about 5 minutes
  • Add squash and sauté for 5 minutes on medium high. Add 1/2 water and saute for 10 minutes.
  • Add chopped spinach and salt. Sauté for another 5 minutes on medium high heat.
  • Add another 1/4 cup water. Close the lid and cook on medium heat for 10 minutes.
  • Check if the squash is cooked properly. Sauté a little bit more if you want the gravy completely soaked out.
  • Garnish with fried onions
