In the morning, I always prefer something easy and yummy for breakfast because it’s too hard for me to wake up early and make dishes for my kids and family. So, today, I thought that I would make something with eggs and milk so that my kid would not refuse to eat it. I haven’t shared a breakfast or supper recipe in a long time. I won’t have time to snap photographs of breakfast since I’ll be rushing through it. This morning I had an abundance of time for myself and hence I decided to create a recipe and blog about it. This recipe is a family favorite at our house. This is usually served for breakfast or dinner. It’s a delicious dish that’s very simple to make. This dish is known as “Sweet Vermicelli with Egg.” 

This sweet egg vermicelli is a simple and tasty breakfast or brunch meal that takes less than 15 minutes to prepare. It’s a great breakfast meal to make when you’re running out of time but yet want to eat something delicious. Since this is a star dish for kids, you can easily pack this for your kids’ tiffin. You need to try this at home, so in this article, I will share how to prepare it.

Instructions

  • Soak almonds and pistachios overnight
  • Peel and shred almonds and pistachios
  • Boil milk until reduced to half
  • Add the saffron, leave to cool. While the mixture cools, break the vermicelli into 2.5 cm (1″) long pieces.
  • Beat the eggs then mix in the milk and set aside
  • Melt the ghee in a non-stick deep frying pan with a handle
  • Add the cardamom, cinnamon, and vermicelli. Stir and fry golden brown over low heat.
  • Add the egg-milk mixture and constantly stir until the vermicelli softens and the eggs coagulate.
  • Add the rose water and raisins (add 3 tbsp of milk powder to enhance the flavor)
  • Cover and keep over very low heat for 10 – 15 minutes. Leave to rest uncovered. When cool, stir with a fork to loosen the vermicelli.
  • Transfer to a dessert bowl. Sprinkle with the shredded almond and pistachio. Serve alongside tea or as a dessert.
