Ingredients
- 1 kg chicken
- 1 cup onion paste
- ½ cup ginger & garlic paste
- 1 tbsp red chilli powder
- ½ tbsp garam masala powder
- salt to taste
- 125 ml vinegar
- 500 ml mustard oil
Instructions
- Wash the chicken thoroughly and drain any excess water.
- In a pan, heat the mustard oil and fry the chicken pieces until they are golden brown. Do not add salt or spices while frying.
- Once fried, remove the chicken from the oil and set it aside.
- In the same oil, add the onion paste, ginger & garlic paste. Sauté well until the color changes to light brown.
- Add red chilli powder, garam masala powder, and salt to the sautéed mixture. Mix well.
- Pour in the vinegar and continue to cook the mixture for 3-4 minutes, allowing the vinegar to infuse with the spices.
- Add the already fried chicken pieces to the spicy mixture. Mix and coat the chicken well with the spices.
- Cook the chicken and spices together for another 8-10 minutes, allowing the flavors to meld.
- Once cooked, remove from heat and let it cool down.
- Transfer the chicken achar to an airtight container and store it in the refrigerator. It can be stored for up to 6 months.
