Ingredients
- 1 kg beef
- 1/4 cup mustard oil
- 1 cup onion paste
- 1 tbsp garlic-ginger paste
- salt to taste
- 2 tbsp coriander powder
- 1 tbsp cumin powder
- mixed whole spices - cloves, cardamom, cinnamon, bay leaves, black pepper as needed
- 2 cups basmati rice for polao
- 6 cups or as needed water
Ingredients needed for meat gravy
- 3-4 tbsp mustard oil
- 1 cup onion paste
- 1 tbsp ginger-garlic paste
- salt to taste
- 1 tbsp almond paste
- 1 tbsp lemon juice
- 1 tbsp sugar
- 2 tbsp yogurt
Instructions
- Heat the oil and lightly fry the mixed spices one by one.
- Then add the chopped onions and fry until they become soft.
- Once the onions are soft, add the meat ,ginger-garlic paste, coriander, cumin powder, and salt.Cook for a few minutes.
- Then add enough water to cook the rice and meat together.
- Once the meat is cooked, remove it from the water and set it aside.
- Wash the rice and cook it in the remaining water. Once the rice is cooked, let it cool completely.
Preparation method for meat gravy
- When the oil is hot, lightly fry the chopped onions and add the boiled meat.
- Mix well and then add all the other ingredients along with a little water.
- Cook until the gravy thickens and then let it cool before serving.
Preparation method for Roti Dough
- Mix all the ingredients with the flour and make the dough for the yeast. Then cover and keep it in a warm place for 1 hour to rise.
- After 1 hour, knead the dough into a thick round bread like a pizza. Place the bread into a deep pan.
- Then layer it with rice, meat, fried onions, and chopped almonds, and repeat until the layers are equal. Flatten lightly and level it.
- Once it's hot, turn it over onto a flat frying pan. Cook for a few more minutes.
- When the bread is a light brown color and has cooked properly, it can be removed from heat and served hot.
