Wondering what inspired me to try this dish? Well, one day I went out to try pineapple pizza. While I was trying that pizza I enjoyed the pineapple and chicken combination. So, I decided to use pineapple in my chicken curry and surprisingly it came out too good!

Before preparing this dish, I had never tasted pineapple chicken curry. But when I shared my idea with my husband, he really appreciated it and helped me a lot in cooking this new recipe. He has been putting a lot of effort into attempting to recreate the recipe, and that gave me the courage to try it myself. Well, after tasting the recipe, my husband got carried away with the taste. He could not believe that it was a homemade dish.

The unique taste of this pineapple chicken curry gets a new dimension with Asian ingredients. Chicken is cooked with pineapples, carrots, potatoes, bell peppers, and other vegetables with blended pineapple. In the Philipino, there is almost a similar dish which is known as “Pininyahang Manok”. Some variations of the recipe use a base of chicken stock for the milk.

To soften and enhance the flavor of pineapple while preparing this meal, it is usually cooked briefly in a pan. Can you believe, it just takes 30 minutes to put it together? Honestly, you can have comfort cuisine that is “better than takeout” on the table in 30 minutes! Indeed, it is the ideal supper for hectic weeknights.

This curry freezes well, just let it cool to room temperature, then transfer it to a freezer bag and freeze.

Pineapple Chicken Curry

Instructions

  • Cut the chicken into regular pieces, and wash it properly.
  • Cut the pineapple into small pieces and turn it into a paste using a blender.
  • Marinate the chicken pieces with turmeric powder, coriander powder, red chili powder, garlic paste, and ginger paste for 30 mins. Don't forget to cover it with plastic wrap and keep it in the refrigerator.
  • Heat the oil in a pan (Set over medium-high heat) and add onion. Fry the onion until it turns golden brown.
  • Add pineapple paste to it and cook for 5 minutes.
  • Add the marinated chicken and cook it for 5-10 mins.
  • Add cinnamon and cardamom powder.
  • Add salt and sugar as per taste.
  • Add 1 cup of boiled water and cover the pan with a lead. Cook it for 20-25 mins.
  • Make sure that the meat is tender to bite. Serve with bread, white rice, or fried rice, and enjoy your meal.
