Nolen Gurer Payesh

Ingredients
- 1 cup pulao rice
- 2 cup date palm jaggery
- 1 liter milk
- 1/3 tsp cinnamon powder
- 1/2 cup powdered milk
- 1/2 cup grated dry fruits
- 2 tbsp shredded coconut
- pinch of salt
- 1 tbsp ghee
Instructions
- Wash your rice until the water is clear. Soak the rice for 10 to 15 minutes. Then take the rice into a grinder and grind the rice carefully as a granule texture. Don't make it too smooth. This helps in cooking rice quickly and gives a smooth texture.
- Take a vessel and add milk. Once the milk comes to a boil add the rice and pinch of salt. Keep the flame low after the rice has been added and keep stirring it every 6-7 minutes.
- Rice will take some time to cook. Once it turns mushy, reduce the flame and add crushed nolen gur along with powdered milk. Add the cinnamon powder and shredded coconut. Cook the payesh for a few minutes till it turns thick. You have to ensure that milk is not on high flame as the gur might curdle the milk. In a pan add 1 tsp ghee and roast the grated dry fruits in low flame. You can add any nuts of your choice.
- Switch off the flame and now ready your Nolen Gurer Payesh. Garnish with grated dry fruits, shredded coconut, and a tiny portion of jaggery.
