Narkel Naru/ Coconut Ladoo

Ingredients
- 3 cups shredded coconut avoid the brown part
- 2 cups of jaggery made from sugarcane.
- 1/ teaspoon cardamom powder
- 1/2 teaspoon cinnamon powder
- 1 bay leaf
- 1/2 cup powdered milk
- 1/2 cup ghee
- 2 tablespoon rice powder
- Pinch of salt
- Dry fruits as you like
Instructions
- Take a pan, heat well, and put the ghee, add bay leaf and stir for 2-3 seconds. now rake the shredded coconut and jaggery into a bowl. Mix well using your hands. Then add this to the pan.
- Stir frequently on medium-low heat. Add cardamom and cinnamon powder. Add salt and keep stirring. When not stirring, keep the pan covered.
- Continue stirring until the mixture darkens and the jaggery caramelizes. After caramelised add the powdered milk and rice powder and keep stirring again. To test whether it's done, take a small portion of the filling, place it on your palm, and try to shape it into a small ball. If the mixture does not bind, it means that it is not done yet.
- This process should take about 20 to 25 minutes. When the process is nearly complete, add grated dry fruits if you like. Once the mixture is ready, you should be able to form a tight ball.
- After 20 to 25 minutes the coconut mixer is ready to make naru. Now take a tiny portion while the mixture is still hot and roll it quickly. You can roll the ball over the milk powder or grate dry fruits for decorations.
