Since I was a child, I have only ever eaten lote or bamla fish prepared as lote Mach jhuri (curry). This fish can cook in many ways. Loitta shutki bhuna, Loitta jhuri, Loitta mach with vegetables, etc. The Bengali community has an equal love/hate relationship with the type of fish that lote fish belongs to. Some people don’t like the smell of dried lote fish or bamla fish, on the other hand, some can finish plates of rice just with this fish. And the second one is totally me! The fish has a slimy texture and a salty flavor. Many people don’t cook it or eat it because it is soft, mushy, and full of thin, squishy, and slimy bones.

Bamla fish has several names in different regions like Bombay duck, bummalo, bombil, bombili, boomla, lote, loitta, etc. This fish is a saltwater fish or sea fish. Dried Bamla fish or lote mach curry is a very popular dish in Bangladesh. Also, Bamla fish is mostly known as Loitta shutki or lote mach. I am a big fan of shutki by the way. My mom actually makes this dish so perfect. This is my all all-time favorite so when I crave for this I make this dish and eat this along with plain steamed rice. In the US, bamla fish is very rare so my mom sends me this fish from Bangladesh. When I want to have some Bengali homely food I surely have this curry on my dinner menu. Instructions

  • Cut the dry Bamla fish into small pieces and wash it with warm water properly ( Change the water 3 times to clean it properly)
  • Add 1 tsp of oil to a pan and fry the small pieces of fish for 5-8 minutes.
  • Heat another pan and add mustard oil. Add some chopped onion and fry it until soft.
  • Add garlic paste and ginger paste and fry it for 1-2 minutes.
  • Add turmeric powder, red chili powder, coriander powder, and 1 cup of warm water.
  • Add the chopped potato and cook it on medium heat for 5-10 minutes.
  • Add the fried dry Bamla fish and mix it with the spices and potatoes properly. After mixing, add 2 cups of warm water to it.
  • Cover the pan with a lid and cook it for 20-30 minutes.
