Tofu Stir Fry

Ingredients

For stir fry

  • 2 tablespoon olive oil or neutral oil
  • 1 yellow pepper julienned
  • 1 carrot jullinned
  • Handful green beans
  • 1 tablespoon sliced ginger
  • 16 ounces super firm tofu drained, pressed cut into bite size
  • 1 red bell pepper julienned

For sauce:

Instructions

  • In a deep skillet or wok heat oil
  • Add tofu and brown from all sides
  • Add vegetables and stir fry until soft
  • In a bowl mix the sauce ingredients then add to the vegetables and tofu stir on medium heat for 2 minutes until the sauce thickens.
