In a bowl, combine lemon juice, lemon zest, coriander powder, turmeric powder, curry powder, chopped spring onions, half of the chopped peanuts, grated ginger, and ground black pepper with the prawns.
Marinate the mixture for 15 minutes.
Heat oil in a pan over medium heat. Add the marinated prawns and cook for 2 minutes, or until they slightly curl, stirring occasionally. Season with salt to taste.
In a small bowl, mix water and cornflour to create a slurry, then pour it over the prawns.
Simmer for a few seconds until the sauce thickens. Top with chopped peanuts and chopped peanuts. Serve.
