  • In a bowl, combine lemon juice, lemon zest, coriander powder, turmeric powder, curry powder, chopped spring onions, half of the chopped peanuts, grated ginger, and ground black pepper with the prawns.
  • Marinate the mixture for 15 minutes.
  • Heat oil in a pan over medium heat. Add the marinated prawns and cook for 2 minutes, or until they slightly curl, stirring occasionally. Season with salt to taste.
  • In a small bowl, mix water and cornflour to create a slurry, then pour it over the prawns.
  • Simmer for a few seconds until the sauce thickens. Top with chopped peanuts and chopped peanuts. Serve.
