Beef Tehari in Mustard Oil

In a bowl, combine 2 tbsp ginger, 2 tbsp garlic, 1 tsp cumin powder, 1 tsp coriander powder, 2 tbsp tomato paste, 1 tbsp almond paste, 1 tsp dried chilli, 1/2 cup mustard oil, 1 tsp salt, and the beef (500g). Mix well and marinate overnight or for at least 2-3 hours.
Heat 2 tbsp soybean oil in a pan. Add 1.5 cups sliced onions and sauté until golden brown.
Add the marinated beef and cook for about 10 minutes. Cover and simmer for another 20 minutes.
Add 1 cup boiled potatoes and mix well. Cover and cook for an additional 5 minutes.
In a separate pan, heat 1/2 cup mustard oil.
Add 1/2 cup sliced onions and sauté for 1 minute.
Then, add 4 cups of water. Once the water starts boiling, add the soaked rice (2 cups) and cook for 10 minutes over low heat.
After 10 minutes, layer the rice with the cooked beef mixture. Cover and let it cook on low heat for another 10 minutes.
Garnish with fried onions (beresta), 2 tbsp raisins, and serve hot.
