  • Soak the cauliflower in salted water for 10 minutes to remove any insects. Then, steam it for 10 minutes until partially cooked.
  • Heat oil in a pan and deep-fry the cauliflower until golden brown. Remove it from the oil and set aside.
  • In the same pan, add all the other ingredients together and create a smooth paste. Coat the cauliflower with this paste.
  • Cover and let it marinate for 10 minutes. Then, add ghee and green chilies and cook on low heat until the cauliflower is tender and the flavors meld together.
  • Season with salt according to taste.
  • Add milk and raisins to the pan and stir gently. Cook for another 10 minutes, allowing the flavors to infuse.
  • Serve the delicious roasted cauliflower stir-fry alongside pilaf or rice.
