Instructions

  • First, heat oil in a pan and fry the onions until they are brown. Add all the spices and cook for a few minutes.
  • Then, add the vegetables and cook for 5 minutes. Remove from heat and add the rice and lentils. Add enough water and cover it for 10-15 minutes.
  • Finally, add green chilies and the reserved vegetables. Cover it and let it cook for another 5 minutes.

Serving:
Serve the khichuri on a plate with green chilies and beresta (crispy fried onions) on top.
