Marinate the mutton with sour curd and salt for 30 minutes.
Heat oil in a pan.
Add cinnamon, cardamom, cloves, peppercorns, and bay leaves in the hot oil.
Add sliced onions and saute until they turn golden brown, but not deep fried.
Add ginger and garlic paste and fry until the raw smell is gone.
Add a little water and red chilli paste (if using), and cook for 30 minutes until the masala is cooked well. Keep adding water as needed to prevent the masala from burning or sticking to the pan.
Add the marinated mutton to the pan and mix well. Do not add water as the mutton will release its own juices.
Cook the mutton for 1 to 1.5 hours or until it becomes tender. If the mutton is not soft, add some hot water to the pan.
Add sugar to balance the flavours.
Once the mutton is cooked, add green chilies on top, cover the pan, and keep it on low heat.
Let the pan sit for a few minutes before serving. You can garnish the dish with beresta (fried onions) if desired.
