Wash the soaked rice and drain well.
Heat 1 tablespoon of ghee in a pan and lightly fry the diced paneer until golden. Soak the fried paneer in cold water and set aside.
In the same pan, heat 3 tablespoons of ghee and lightly sauté the whole spices (cardamom, star anise, cloves, bay leaf, cinnamon).
Add chopped onions, garlic paste, and ginger paste. Sauté until the onions turn translucent.
Add the chopped vegetables (green peas, carrots) and sauté for a few minutes.
Add cumin powder and mix well.
Add the soaked rice and sauté gently until the rice grains are well-coated with ghee.
Add 2 cups of hot water, salt, sugar, lemon juice, and let it cook until the rice is almost done.
Now add the fried paneer, chopped tomatoes, and raisins. Mix gently.
Cover the pan and let the rice cook completely on low heat.
Once the rice is cooked, drizzle 3 tablespoons of ghee over it and mix gently.
Garnish with chopped almonds and serve the flavorful Matar Paneer Pulao. Enjoy!
