  • Wash the soaked rice and drain well.
  • Heat 1 tablespoon of ghee in a pan and lightly fry the diced paneer until golden. Soak the fried paneer in cold water and set aside.
  • In the same pan, heat 3 tablespoons of ghee and lightly sauté the whole spices (cardamom, star anise, cloves, bay leaf, cinnamon).
  • Add chopped onions, garlic paste, and ginger paste. Sauté until the onions turn translucent.
  • Add the chopped vegetables (green peas, carrots) and sauté for a few minutes.
  • Add cumin powder and mix well.
  • Add the soaked rice and sauté gently until the rice grains are well-coated with ghee.
  • Add 2 cups of hot water, salt, sugar, lemon juice, and let it cook until the rice is almost done.
  • Now add the fried paneer, chopped tomatoes, and raisins. Mix gently.
  • Cover the pan and let the rice cook completely on low heat.
  • Once the rice is cooked, drizzle 3 tablespoons of ghee over it and mix gently.
  • Garnish with chopped almonds and serve the flavorful Matar Paneer Pulao. Enjoy!
