Wash the chicken thoroughly and drain any excess water.
In a pan, heat the mustard oil and fry the chicken pieces until they are golden brown. Do not add salt or spices while frying.
Once fried, remove the chicken from the oil and set it aside.
In the same oil, add the onion paste, ginger & garlic paste. Sauté well until the color changes to light brown.
Add red chilli powder, garam masala powder, and salt to the sautéed mixture. Mix well.
Pour in the vinegar and continue to cook the mixture for 3-4 minutes, allowing the vinegar to infuse with the spices.
Add the already fried chicken pieces to the spicy mixture. Mix and coat the chicken well with the spices.
Cook the chicken and spices together for another 8-10 minutes, allowing the flavors to meld.
Once cooked, remove from heat and let it cool down.
Transfer the chicken achar to an airtight container and store it in the refrigerator. It can be stored for up to 6 months.
