  • Wash the chicken thoroughly and drain any excess water.
  • In a pan, heat the mustard oil and fry the chicken pieces until they are golden brown. Do not add salt or spices while frying.
  • Once fried, remove the chicken from the oil and set it aside.
  • In the same oil, add the onion paste, ginger & garlic paste. Sauté well until the color changes to light brown.
  • Add red chilli powder, garam masala powder, and salt to the sautéed mixture. Mix well.
  • Pour in the vinegar and continue to cook the mixture for 3-4 minutes, allowing the vinegar to infuse with the spices.
  • Add the already fried chicken pieces to the spicy mixture. Mix and coat the chicken well with the spices.
  • Cook the chicken and spices together for another 8-10 minutes, allowing the flavors to meld.
  • Once cooked, remove from heat and let it cool down.
  • Transfer the chicken achar to an airtight container and store it in the refrigerator. It can be stored for up to 6 months.
