  • In a pan, boil the rice with 3 cups of water, bay leaves, cinnamon sticks, and salt to taste. Cook on low heat until the rice is soft and the water has evaporated.
  • In another pot, heat the milk and add grated coconut. Let it boil for 5-7 minutes on medium heat.
  • Add the cooked rice to the milk and mix well. Cook for another 10 minutes on low heat.
  • Add saffron and mix well. Cook for 5 more minutes.
  • Add raisins and chopped almonds and mix well.
  • Remove from heat and let it cool down.

Notes

Serve the Shahi Payesh cold or at room temperature.
Note: You can adjust the amount of sugar according to your taste. You can also add condensed milk for a richer taste.
